The central area consists of three kitchens with four zones, six pasta-cookers, a fry top, double electric fryer and a refrigerating cell. The bars that are to be found around the kitchen are three refrigerating bars and one plate-warming bar. The pastry room has a refrigerator for pastries and a freezer, a large working-surface and yet two more cookers. The furthest part is divided into three large working surfaces for processing meat, fish and vegetables. In the back there are three refrigerating cells and an ice-cube maker. The dish wash corridor is organized in such a manner to deal quickly with all that comes in for washing, thanks to the glass washer with ioniser and an industrial dishwasher. A large cap covers all of the cooking-areas.
